The Rum
A delightful tipple based on a traditional Derbyshire farmhouse recipe and made in our converted barn, on Church Farm, Barlow, Derbyshire. The mostly forgotten Derbyshire Pudding is a delicious baked pudding made with plenty of raspberries and laced with rich and tart lemon curd.
We have lovingly reconstructed this old recipe as a delicious, all natural fruit infused rum. We rectify neutral cane spirit with botanicals and spices before blending down to 40% with filtered water and cold infusing for 30 days with (as local as possible) raspberries and lemon zest from Chatsworth imperial lemons, after that it’s rough filtered and bottled.
Perfect with a light tonic or with lemonade, or on its own with plenty of ice. And yes, its in a milk bottle, because its fun and we think spirit brands take themselves far too seriosuly sometimes.

Derbyshire Pudding Recipe
Ingredients:
Pastry for lining, raspberry jam for covering the bottom of the tin, 50g butter, 50g sugar, 1 egg, 75g self raising flour, 1 tbsp lemon curd. Fresh raspberries for decoration (if you like, but why not?).
Method:
Line a dish with pastry. Beat sugar and butter together until fluffy. Add the egg and beat well. Fold the flour in. Add a little water if necessary. Warm lemon curd and pour into mixture to get a marbled effect. Spoon jam on the pastry and then pour the mix on top. Bake in a moderate oven (180ºC) for 35 minutes, allow to cool and then garnish with raspberries and dig in!
